I have always made chicken enchiladas, with the famous Old El Paso kit. It’s simple, au gratin, rich in flavors. We love ! And this time, I have a mad desire to make some, I have a kit in the cupboard but no chicken. I have ground beef. So I change the recipe and I start with this variant.

°1 kit for Old El Paso Enchiladas

°2 onions

°500 grams of ground beef

°1 red pepper

°1 tablespoon heavy cream

°150 grams of grated cheese mix 3 cheeses or Emmental

°olive oil

Peeled and finely chop the onions. Cutting pepper in 2, deseed it and cut it into small dice.

In a large sauté pan, heat a drizzle of olive oil. Sauté the onions and bell pepper for 5 minutes.

Add the crumbled minced meat and sauté for 5 minutes, stirring. Add half of the tomato sauce, the enchilada spices and a little salt. Mix then cover and simmer over low heat for 20 minutes, stirring occasionally. Off the heat, add the fresh cream and 50 grams of grated cheese. To mix together.
